Today I'm sharing this walnut alfajores recipe, a tasty and easy one for everyone who loves the combination of walnut and dulce de leche. Crunchy and soft at the same time, these little alfajores will win you over, so don't miss them. You can use other fillings, but personally I think dulce de leche with walnut is spectacular.

Ingredients

  • 1 egg
  • 20 g cornstarch
  • 80 g all-purpose flour (0000)
  • 60 g butter
  • 45 g sugar
  • 40 g walnuts
  • 1 teaspoon vanilla extract
  • Orange zest, to taste
  • 5 g unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • A pinch of baking soda
  • 400 g thick pastry dulce de leche (dulce de leche repostero)
  • 170 g white chocolate
  • 2 tablespoons vegetable oil
  • Chopped walnuts, to decorate

Metric measurements: a kitchen scale gives the best results.

Method

  1. To start these walnut alfajores, in a bowl beat the softened butter with the sugar until creamy. Then add the orange zest and the vanilla extract to give it some aroma. Mix well. Now add the egg and combine all the ingredients well.

  2. In a separate bowl, sift together the flour, baking powder, baking soda and unsweetened cocoa powder.

  3. Next, process the cornstarch together with the walnuts. This keeps the walnuts from releasing too much oil and turning into a paste.

  4. Once the walnut mixture is ready, add all the dry ingredients to the dough. It should be a very moist dough. Place it on plastic wrap, cover it and flatten it out. Chill it in the fridge for one hour.

  5. In the meantime, put a buttered baking sheet in the fridge so you can bake the cookie rounds on it cold.

  6. After the hour, cut out the rounds with a round cutter and place them on the cold sheet. Bake for 12 minutes, then let them cool completely.

  7. Once the rounds are cool, put the thick dulce de leche in a piping bag with a plain tip and carefully assemble the alfajores. Finally, melt the white chocolate (if it is couverture chocolate it needs to be tempered, if it is a coating it doesn't), mix it until smooth with the oil and coat the alfajores. Remove the excess, decorate with walnuts and leave them on a tray until the chocolate sets.

  8. It is best to let them rest for 48 hours, as the flavors intensify, but if you can't hold back, go ahead and try them!

  9. I hope you like them. If you make them, tell me in the comments what you thought, and if you want, send me your photos on my social media.
